One of our favorite childhood meals, without the dairy.
- 4 slices of your favorite sandwich bread (we used rye bread)
- 1 wheel of Rooted Delights Cheddah - 4 slices
- 2 tablespoons vegan butter
- 1/2 avocado, sliced
- 1 tomato, sliced
- sea salt to taste
- black pepper to taste
Spread about 1/2 tablespoon butter on one side of each slice of bread.
On the unbuttered sides of the bread, stack your cheez slices, avocado and tomato. Finish up with a dash of cracked pepper and salt. Make a sandwich of your slices.
In a panini maker, place sandwich, butter side down, and cook for 3 minutes until golden and cheez starts to melt. If you don't have a panini maker, cook in a hot skillet or fry pan with a lid for 3-4 minutes or until golden and cheese starts to melt.
If cooking sandwich in a skillet, flip sandwich over and cook for additional 2-3 minutes until golden and cheese has melted. Cut in half and ENJOY!
