GRILLED CHEEZ WITH TOMATO & AVOCADO
One of our favorite childhood meals, without the dairy. Yield: 2 sandwiches 4 slices of your favorite sandwich bread (we used rye bread) 1 wheel of Rooted Delights Cheddah - 4 slices 2 tablespoons vegan butter 1/2 avocado, sliced 1 tomato, sliced sea salt to taste black pepper to taste Spread about 1/2 tablespoon butter on one side of each slice of bread. On the unbuttered sides of the bread, stack your cheez slices, avocado and tomato. Finish up with a dash of cracked pepper and salt. Make a sandwich of your slices.
